Osteria il Vinverso del Baffo is an amazing restaurant and we would eat there more often, but you can never be sure when it will be open. When you get to town, walk down the street to the restaurant and see if it is open. If it is, and you have never eaten here, definitely take advantage of catching them on an open night. The pici pasta with sausage and truffle cream sauce is the best in Umbria!
